Banana oat pancakes
A twist on a classic pancake, these banana oat pancakes are packed with fruit and wholegrains.
We tied this recipe in with our MSK News issue #30, focusing on gout.
Melissa said “for those with gout, following a balanced, wholefood diet is important, not only for gout management but overall health as well”.
But we know these pancakes are sure to be a favourite for everyone.
Serves 2
Prep and cook time: 15 mins
Ingredients:
- 1 large banana or 2 small bananas
- 1 cup rolled oats
- 1 egg
- ¼ cup milk of your choice
- ½ teaspoon baking powder
Method:
- Blend the oats in a blender until it is almost a flour consistency.
- Add the remaining ingredients to the blender and blend until smooth (roughly 2 minutes).
- Cook spoonfuls of the batter in a non-stick frying pan set over medium-high heat until golden brown on both sides and cooked through.
- Serve with your favourite toppings. These pancakes go great with yoghurt and fruit!
