Duck Breast Salad

A light and satisfying duck breast salad featuring nutritious broccoli, corn, egg, and a creamy Greek yoghurt dressing—finished with optional shredded cheese for extra flavour.

Ingredients: 

  • Broccoli : 1 broccoli (~250g)
  • Duck breast: 200g (~5 slices)
  • 1 Egg
  • Corn: 1/2 cup (no salt canned kernels)
  • Plain Greek yoghurt: 2 tbsp
  • Shredded cheese: 1 tbsp (optional )

Steps:

  1. Steam broccoli and drain
  2. Drain the corn kernels.
  3. Put an egg into cold water, boil the egg for 7-8 minutes, then remove the shell
  4. Place broccoli, corn and yoghurt into a large bowl and mix well.
  5. Place the mixed vegetables onto a plate and place the sliced duck breast and egg on top of the vegetables.
  6. Sprinkle the cheese on top and serve.

Tips:

  • You can use frozen broccoli instead of fresh
  • Use your favourite cheese to shred and sprinkle on top
