-3 avocados
-half a brown onion
-teaspoon of sea salt
-whole tomato (Diced)
-Tablespoon of lime juice
-Coriander finely chopped
-1/2 Red onion finally chopped
-1 Jalapeno finally chopped
-Balsamic glaze (If having with toast)
1. Roughly slice up the onion and along with the diced tomato, throw it into a food processor and blitz till it is a paste
2. Add salt and lime juice and blitz till combined (here you can taste and adjust the lime juice as necessary)
3. Add the avocado in and blitz slowly to combine. Blitz slowly to avoid turning the mixture into a mush. Control as necessary to get the guac at the required consistency.
4. Serve with Corn chips or have it on sourdough toast for a delicious snack!
