Peanut butter energy balls

Looking for a quick, tasty snack that involves zero cooking? Try Shalini’s energy balls. They’re perfect for when you’re craving a sweet snack and ridiculously easy to make.

Ingredients:

  • 15 de seeded medjool dates
  • 2 cups rolled oats
  • 1 cup smooth peanut butter
  • ½ cup honey
  • 1 teaspoon vanilla essence

Method:

  1. Place rolled oats in a food processor and process on high for about a minute until you’ve formed an oat flour.
  2. Then, add the rest of the ingredients and process for another 1 to 2 minutes until your dough is formed. It should look and feel like cookie dough.
  3. Using a 1 tablespoon scooper, scoop out dough and then roll between your palms to form your balls.
  4. Place on a dish lined with baking paper.
  5. For best results, refrigerate the balls.
  6. Enjoy!
