Quesadillas

Quesadillas

Serves 5 
Time: 20mins 

Ingredients 

350g Refried beans 

100g Frozen corn 

350g Colby Cheese  

10 Plain Tortillas 

 

Sauce 

¾ cup of Sour Cream 

2-3 tablespoons pf Sriracha 

 

Method  

  1. Lay a tortilla flat on a chopping board. 
  2. On half of the tortilla spread about 35g of the refried beans
  3. Then sprinkle 10g of frozen corn, followed by 35g of the cheese 
  4. Fold the tortilla in half and press down gently 
  5. Cook on a medium heat using a flat pan until each side of the tortilla lightly brown and the cheese is melted. 
  6. Once cooked, take off the heat and cut the tortilla in half to serve 
  7. Repeat steps for all the tortillas 
  8. For the sauce, combine the sour cream and Sriracha in a bowl, then serve
