Kitty’s Special Spaghetti Bolognese

Kitty’s Special Spaghetti Bolognese is a hearty twist on an Italian classic, featuring rich tomato sauce, tender broccoli, and a perfectly fried egg on top. This is comfort food with a nutritious kick!

Serves 2-3

Ingredients: 

  • 200g spaghetti
  • 250g minced beef
  • 2 medium fresh tomatoes – diced
  • 1 clove garlic – sliced
  • ¼ brown onion – diced
  • 500g Pasta sauce
  • 1 tbsp Olive Oil (for meat) + 1 tbsp (for egg)
  • 1 medium egg
  • 1 head of  broccoli
  •  1 pinch of black pepper

Steps: 

  1. Cut the broccoli into pieces, then boil them in water for (or steam) ~ 6 minutes on high heat, then drain the broccoli.
  2. Boil pasta in water for ~9-11 minutes on medium heat, then drain the pasta.
  3. Heat a frying pan on high. Add oil and garlic and fry for 1 minute. Then add minced beef and onion, and fry for another 10 minutes.
  4. Add diced tomatoes to the meat and fry for 3 minutes. Add pasta sauce, mix until it boils.
  5. Heat another frying pan on high. Add oil, turn to medium heat, add egg and fry until the edges are brown and crispy.
  6. Plate pasta, broccoli, pasta sauce and fried egg, and add a pinch of black pepper, ready to serve.

Tip: 

  1. You can keep the broccoli stem for more fibre, but Kitty recommends peeling or cutting off the outer hard part for better texture.
