Shalini Ekanayake is a current Master of Human Nutrition student at Deakin University with hopes of becoming a registered clinical nutritionist upon completion. She has a strong passion for cooking and loves trying her hand at various cuisines and experimenting with all sorts of ingredients! Of all the types of cuisines, her favourites are Italian and of course Sri Lankan cuisine (her family’s culture).

Burrito Bowl

What’s not to love about this delicious chicken, rice and guacamole burrito bowl. With yummy corn and fiery jalapenos, its the perfect blend of sweet and spicy 🌶️🌽

Ingredients:

  • 1 chicken breast chopped
  • salt and pepper to taste
  • 2 tsps of paprika powder, cumin and dried oregano
  • 1/2 brown onion (chopped)
  • 2 cloves of garlic (chopped)
  • 1 cup brown rice
  • 1 packet white corn chips
  • 1 handful fresh coriander
  • 1 cup corn (frozen)
  • jalapenos to taste

Guacamole:

  • 3 avocados
  • 1/2 brown onion
  • 1 tsp of sea salt
  • 1 whole tomato (diced)
  • 1 tablespoon of lime juice

Directions:

Cook the brown rice as per instructions on the packet

Guacamole

  • Roughly slice up the onion and along with the diced tomato, place into a food processor and blend until it forms a paste
  • Add salt and lime juice to the paste and blend until combined (here you can taste and adjust the lime juice as necessary)
  • Add the avocado in and blend slowly to combine. Blend slowly to avoid turning the mixture into a mush. Control as necessary to get the guacamole to the required consistency.

Chicken

  • Heat a pan with oil, cook the onion and garlic until soft
  • Add the chicken to the pan and cook until brown
  • Season with paprika, cumin and dried oregano
  • Season with salt and pepper to taste
  1. Lightly cook the corn (steam or boil)
  2. Serve the rice in a bowl and add the guacamole, chicken and corn
  3. Garnish with coriander and jalepenos
  4. Serve with corn chips
