Chicken Tacos
The beauty of tacos is that you can hide the veggies and choose healthier protein options (e.g., lean beef or chicken) to create a great family dinner experience.

Serving : 3-4 people
Ingredients:
- 500 grams minced chicken
- 400g, (1 can) drained black beans
- 2 cloves minced garlic
- 1/2 onion, diced
- 200 grams cherry tomatoes, cut in halves
- 1 tbsp tomato paste
- 200mL water
- 1/2 tbsp sugar
- 1/2 tbsp olive oil
- 30g (1 packet) taco seasoning
- taco shells (hard or soft)
- sour cream
- Sriracha
Steps
- Heat the frying pan with oil.
- Add minced chicken and cook until the water evaporates.
- Add garlic and onion until softened.
- Add black beans and cherry tomato, and cook until soft.
- Add tomato paste and water, mix and cook until thickened to form a sauce.
- Add taco seasoning and sugar, stir and mix well.
- Put the taco shell (soft or hard) into the oven or air fryer, and heat at 120oC for 5 mins.
- Serve with light sour cream, Sriracha and chicken mince
Tips:
- Omit the tomato paste and water if you prefer no sauce
- Corn kernels, shredded carrot, avocado etc are great options to add to your taco.
- You can swap the black beans for a four-bean mix, chickpeas, or kidney beans.
- Add sour cream and Sriracha to taste.
