Shalini Ekanayake is a current Master of Human Nutrition student at Deakin University with hopes of becoming a registered clinical nutritionist upon completion. She has a strong passion for cooking and loves trying her hand at various cuisines and experimenting with all sorts of ingredients! Of all the types of cuisines, her favourites are Italian and of course Sri Lankan cuisine (her family’s culture).

Broccolini & caulini sesame stir fry

Shalini’s super healthy stir fry is great on its own or served with the protein of your choice. This dish is packed full of nutrients and is quick and easy to make.

Ingredients:

  • 1 bunch of broccolini
  • 1 bunch of caulini (180g)
  • 2 tbsp of sesame oil
  • salt and pepper to season
  • 1 tsp of sesame seeds
  • pinch of chilli flakes

Directions:

  1. Heat wok with the sesame oil (medium heat)
  2. Add the broccolini and caulini, cook and toss until tender and stalks are vibrant
  3. Add the sesame seeds, chilli flakes and salt and pepper seasoning
  4. Take off heat
  5. Serve

Serves 4 | Prepping time 10 minutes | Cooking time 15 minutes
