Chicken Tacos

The beauty of tacos is that you can hide the veggies and choose healthier protein options (e.g., lean beef or chicken) to create a great family dinner experience.

Time: 20 mins
Serving : 3-4 people

Ingredients:

  • 500 grams minced chicken
  • 400g, (1 can) drained black beans
  • 2 cloves minced garlic
  • 1/2 onion, diced
  • 200 grams cherry tomatoes, cut in halves
  • 1 tbsp tomato paste
  • 200mL water
  • 1/2 tbsp sugar
  • 1/2 tbsp olive oil
  • 30g (1 packet) taco seasoning
  • taco shells (hard or soft)
  • sour cream
  • Sriracha

Steps

  1. Heat the frying pan with oil.
  2. Add minced chicken and cook until the water evaporates.
  3. Add garlic and onion until softened.
  4. Add black beans and cherry tomato, and cook until soft.
  5. Add tomato paste and water, mix and cook until thickened to form a sauce.
  6. Add taco seasoning and sugar, stir and mix well.
  7. Put the taco shell (soft or hard) into the oven or air fryer, and heat at 120oC for 5 mins.
  8. Serve with light sour cream, Sriracha and chicken mince

Tips:

  • Omit the tomato paste and water if you prefer no sauce
  • Corn kernels, shredded carrot, avocado etc are great options to add to your taco.
  • You can swap the black beans for a four-bean mix, chickpeas, or kidney beans.
  • Add sour cream and Sriracha to taste.
