Coconut Cranberry Energy Bites

Ingredients:

  • 1 cup rolled oats
  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup dried cranberries (unsweetened)
  • 2 tbsp chia seeds
  • 1 tbsp honey or maple syrup
  • 1/4 cup almond butter

Instructions:

  1. In a bowl, combine all ingredients.
  2. Mix until well combined. Add a splash of water if needed for consistency.
  3. Roll the mixture into bite-sized balls.
  4. Refrigerate for at least 30 minutes before serving.
