Eggplant pizza

This zero-flour pizza can be made in the oven or air fryer and is ready in less than 20 minutes! Eggplant is rich in fibre, minerals and vitamin B, which is beneficial for gut health, improving fatigue and health in general.

Time: 15 mins
Serving: 2 serves

Ingredients:

  • 1 eggplant
  • 1 tbsp olive oil
  • 1 pinch black pepper
  • 1 pinch salt
  • 1 pinch mixed herbs
  • 1 tbsp shredded cheese
  • 3-4 strips sundried tomatoes

Method:

  1. Wash and slice the eggplant lengthways into pieces approx. 2 cm thick by 7cm long.
  2. Put sliced eggplant on a baking tray or air fryer tray.
  3. Drizzle olive oil evenly over the eggplant evenly and season with black pepper, salt and mixed herbs.
  4. In the oven, bake for 15 minutes at 180oC, or air fry for 10 minutes.
  5. Add shredded cheese to the top of the eggplant. Bake or air fry for another 5 minutes.
  6. Add sundried tomato strips on top of the cheese.
  7. Ready to serve.

Tip:

  • You add adjust the amount of cheese according to your preference.
  • You can use fresh tomato in place of sundried tomato.
