Impossible quiche Impossible quiche 

An impossibly easy mid-week dinner, this quiche makes its own crust without the need for pastry.

Ingredients:

  • 1/3 cup plain flour
  • 1 ½ cups milk
  • 3 eggs
  • 4 bacon rashers, chopped into roughly 1cm pieces
  • 3 green onions, chopped
  • 1 cup grated cheddar cheese
  • 130gram can corn kernels, drained and rinsed
  • 2 tablespoons chopped, fresh parsley

Method:

  1. Oil a shallow 23cm round flan dish and preheat oven to 180 degrees.
  2. Whisk flour and milk in a medium bowl until smooth.
  3. Whisk in eggs.
  4. Stir in remaining ingredients.
  5. Pour mixture into a prepared flan dish.
  6. Bake for 1 hour or until set.
