Lamb kofta and yoghurt sauceLamb kofta and yoghurt sauce

(Recipe adapted from: RecipeTinEats)

Ingredients:

Kofta

  • 500 g lamb mince
  • 1/2 brown onion, grated/finely diced
  • 1/4 cup breadcrumbs
  • 2 cloves minced garlic
  • 2 tbsp chopped fresh coriander
  • 8 skewers – make sure to soak them in water so they don’t burn whilst cooking

Kofta spice mix

  • 2 tsp cumin
  • 1 tsp ground coriander seeds
  • 2 tsp paprika
  • 1 tsp ground cinnamon
  • 1 tsp cayenne pepper (if you like it spicy, or leave out if you don’t)
  • Salt and pepper to taste

Yoghurt sauce

  • 1 cup Greek yoghurt (make sure it isn’t sweetened)
  • 1 tbsp extra virgin olive oil
  • 1 clove minced garlic
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Method:

Yogurt sauce

  1. Combine the yogurt sauce ingredients and leave in fridge whilst you get the koftas ready

Koftas

  1. Add all the kofta ingredients and spice mix in a large bowl.
  2. With damp hands, divide the meat into 8 equal pieces and push and shape the meat onto 8 skewers.
  3. To cook either BBQ for 6 mins, rotating regularly, until browned all over.
    Or, preheat 1/2 tbsp oil in a large skillet over medium high heat. Cook in batches for 5 minutes in total, turning to brown evenly all over.

To serve:

Koftas go great with a tabouli salad or in flat breads with lettuce, tomato, onion and the yoghurt sauce.
