Shalini’s Lemon Cookies

Ingredients

· 360 g Plain Flour

· 1 teaspoon baking powder

· ½ teaspoon baking soda

· ½ teaspoon salt

· 226 g unsalted butter, softened

· 250g granulated white sugar

· 1 teaspoon vanilla extract

· 2 tablespoons lemon juice

· 1 tablespoon lemon zest

· 1 egg (room temperature)

· 1/3 cup white chocolate chips

Method: 

1. Preheat oven to 170C Fan Forced, and line a tray with baking paper

2. In a medium bowl, whisk together flour, baking po

wder, baking soda, and salt. Set aside.

3. In a large bowl using an electric mixer, cream together butter and sugar until light and fluffy, about 2 to 3 minutes.

4. Add egg and beat to combine. Add vanilla, lemon juice, and lemon zest.

5. Add flour mixture, and mix at low to medium speed just until no flour streaks remain.

6. Add the white chocolate chips

7. Scoop into balls with a tablespoon and place them on the lined baking tray

8. Bake for 10 to 12 minutes. The edges will look done, but the centre will still look slightly soft.

9. Once you take them out of the oven, leave them on the tray for 5 minutes
