Oat chocolate chip cookies

These cookies are crispy on the outside and chewy on the inside. They’re full of fibre and protein, and perfect for when you’re craving something sweet.

Recipe makes 10 cookies.

Ingredients:

  • 1 egg
  • 1/2 cup of smooth peanut butter
  • 1 teaspoon of vanilla extract
  • 1/2 cup of coconut sugar
  • 1/2 cup of rolled oats
  • 1/2 tsp of baking powder
  • 1/4 cup of walnuts chopped
  • 1/4 cup of choc chips
  • Pinch of salt

Method:

  1. Preheat oven to 190 degrees.
  2. Lightly beat egg, stir in the peanut butter and vanilla extract.
  3. Blend 1/4 cup of the oats in a blender into a fine flour.
  4. Add blended oats, sugar, baking powder and salt.
  5. Stir in the remaining rolled oats, walnuts and choc chips.
  6. Place in the fridge for 30 minutes.
  7. Roll mixture into small balls and place onto tray lined with baking paper, then slightly flattened with fork.
  8. Bake for 10-15 mins until golden brown.
  9. Remove from oven and allow to cool.
  10. Enjoy!
