Ingredients: Method: Dipping sauce: Whisk together the ingredients until well combined. This can take quite a bit of whisking. Feel free to adjust to taste.

Rice paper rolls with peanut dipping sauce
HINT: Aiming for different coloured veggies adds nice colour to the dish as well as a range of vitamins and minerals!
