Salmon and cream cheese snacks

This tasty, no-cook snack is loaded with calcium, protein and omega-3 fatty acids. It can be whipped up quickly for an afternoon treat or for when friends pop over unexpectedly.

Ingredients:

  • For the base you can use Melba toast, crackers, cucumber slices, crostini, bagels – whatever you have on hand or prefer (I’ve used Melba toast and cucumber slices)
  • Cream cheese
  • Smoked salmon
  • Fresh dill
  • Cracked black pepper to taste

Method:

  1. Spread the cream cheese on the base.
  2. Add some pieces of salmon.
  3. Top with dill.
  4. Season with cracked black pepper to taste.

Variation:

You can add some zest to this recipe (literally) by adding lemon zest and lemon juice to the cream cheese before spreading it onto your base.

These snacks go really well on a platter with seasonal fruit on a warm summer evening.
