Shalini Ekanayake is a current Master of Human Nutrition student at Deakin University with hopes of becoming a registered clinical nutritionist upon completion. She has a strong passion for cooking and loves trying her hand at various cuisines and experimenting with all sorts of ingredients! Of all the types of cuisines, her favourites are Italian and of course Sri Lankan cuisine (her family’s culture).

Shalini’s Fried Rice

Shalini’s super-tasty fried rice is excellent on its own or served with the protein of your choice. This dish is packed with nutrients and is quick and easy to make.

Ingredients:

  • 2 tbsp oil
  • 1/2 finely chopped onion
  • 2 garlic cloves minced
  • 1 – 1 1/2 cups diced frozen vegetables
  • 2 cups cooked day-old white rice
  • 3 eggs, whisked
  • 3/4 cup spring onions

For the sauce:

  • 1 tbsp Chinese Cooking Wine
  • 1 tbsp Oyster Sauce
  • 1 tbsp light soy sauce
  • 1 tsp sesame oil
  • 1/4 tsp pepper

Directions:

  1. Heat 1 1/2 tbsp oil in a wok or 2 tbsp oil in a skillet or fry pan over high heat until smoking.
  2. Cook the vegetables for 2 minutes so they defrost and the water evaporates.
  3. Add rice and sauce ingredients and cook for 1 1/2 minutes until liquid evaporates.
  4. Move the rice to the side of the wok/pan. Add 1/2 tbsp oil into the cleared space, shift the wok/pan so the heat is centred over the cleared space. Pour in the egg, then scramble.
  5. Combine with the rice
  6. Add spring onion
  7. Remove from heat and serve immediately!
