Spicy Pork Noodle Bowl

In this easy-to-follow recipe, Shalini will have you whipping up a tasty and flavourful dish in no time.

Ingredients:

  • 500g of extra lean pork mince
  • 1 tbs finely grated ginger
  •  2 tbsp black bean sauce
  • 1 tbs sweet chilli sauce
  •  2 spring onions, thinly sliced
  • 1/3 cup coriander leaves
  • 200g vermicelli rice noodles
  • 1 carrot peeled, cut into long matchsticks
  • 1 Lebanese cucumber cut into long matchsticks
  • 410g can of baby corn
  • 1/4 tsp chilli flakes
  •  1 tbsp sweet chilli sauce (for the corn)
  •  1/2 cup raw unsalted peanuts
  • 1 tbsp Olive Oil

Directions:

  1. Roast the peanuts with a little oil and chilli flakes in a small pan until golden and then remove from heat.
  2. Cook the mince, stirring with a wooden spoon to break up any lumps for 5 minutes or until the mince changes colour and is cooked through.
  3. Add ginger, black bean sauce, chilli bean sauce, and sweet chilli sauce. Cook, stirring for 2-3 mins or until heated through.
  4. Remove from heat.
  5. Stir in spring onion, chopped coriander and peanuts.
  6. Cook the vermicelli noodles as per the instructions on the packet.
  7. Drain and rinse the tinned corn under cold water and cook it in the pan used to cook the peanuts.
  8. Add the sweet chilli sauce and cook for 2 minutes.
  9. Divide the noodles among serving bowls.
  10. Top with the mince mixture, sweet corn, carrot and cucumber.

Options

  • Lean chicken mince can be used in place of pork mince
  • Add more or less chilly according to taste
  • Buy carrot sticks from your supermarket or greengrocer to save your hands, wrists and prep time!
